The summer has arrived and you need to keep your head and body cool, and what better way to do that than by eating lots of popsicles?! My body can’t handle dairy very well so I like to make popsicles with water or coconut instead.
I’ve made lots of variations of these popsicles this spring, but I finally found the right amount of ingredients and now I’m sharing them with you! It’s easy, it’s quick and they are healthy, enjoy!

Coconut Strawberry Popsicles
Refreshing summer popsicles with coconut and strawberry
Ingredients
- 13.5 ounce coconut milk
- 1 half lemon (juice&zest)
- 2 cups strawberries
- 1/4 cup maple syrup
- 1/4 cup mint leaves
Instructions
Add the coconut milk and strawberries to a blender, and blend until it's a smooth mixture.
Add the coconut- strawberry mixture, mint, lemon juice, lemon zest and maple syrup to a small saucepan. Set the pan over medium heat until warm; this will take approximately 5 minutes.
Take the pan off the stove and set aside for 30 minutes to let the flavors mix.
Pour the mixture through a fine sieve to filter the mint and strawberry seeds.
Pour the mixture into the ice pop molds and freeze for 4-6 hours.

coconut lime popsicles
A refreshing vegan popsicle with coconut and lime
Ingredients
- 13.5 ounce coconut milk
- 1 Lime (juice & zest)
- 1 vanilla bean
- 1/4 cup fresh mint leaves
- 1/4 cup maple syrup
Instructions
Add the coconut milk, mint, lime juice, lime zest and maple syrup to a small saucepan. Split the vanilla bean lengthwise and add the whole bean to the saucepan. Set the pan over medium heat until warm. This will take approximately 5 minutes.
Take the pan off the stove and set aside for 30 minutes to let the flavors mix.
Pour the mixture through a fine sieve to filter the vanilla bean and mint.
Pour the mixture into the ice pop molds and freeze for 4-6 hours.
